Ingredients Information

Here I will keep a running list on my first choice for ingredients.

Why?

I believe in eating organic corn whenever possible to avoid transgenically modified organisms, but when I write up a recipe on my blog I will simply write "corn" not "organic corn".  First because it saves me effort, and second because it sounds less pretentious.  So if you are interested by what I specifically mean when I name an ingredient--here is where you will find that info:

Also note that this is my "first choice" for ingredients, but for many various reasons we don't always get our first choice, do we? Be patient with yourself and others--don't be an ingredient cop.

I will periodically add to this list.

all-purpose flour - unbleached all-purpose flour

baking powder - aluminum free

butter - means butter, not margarine, and preferably comes from grass-fed cows.

eggs - free-range eggs (not vegetarian-fed). Ours come from the back yard.

honey - Raw, local honey.  Strained to remove debris but not filtered. (Much of the honey sold in stores is actually mixed with corn syrup.)  Our honey comes from the back yard. 

maple syrup -100% pure maple syrup.  It comes right out of trees and is simply boiled down to a concentrated syrup.  I believe our bodies know how to process things that come from nature a lot easier than things that come from a factory, like the pure syrup substitute--corn syrup.

milk -Milk should come from grass-fed cows.  Right now for us, getting grass-fed cow milk also means that our milk is raw.  I believe in the value of eating live food, but also understand the need to feel safe about food production that is out of our hands.  That said--if we ever get our own cow, we will drink the milk raw.

produce - fruits and vegetables grown ecologically, and close to home, or even better--in the back yard!. (sometimes associated with words like: organic, local)  Used in its natural season. 

whole wheat flour - fresh ground.  Stored in the refrigerator or freezer to preserve nutrients.
